Mixed Greens Salad With Peaches, Goat Cheese
This simple, quintessential salad. Here, peppery arugula and earthy goat cheese with juicy peaches, but the recipe can be tweaked to suit all seasons: If you can’t find ripe peaches, you can use cherries, strawberries, or cherry tomatoes.
- 150-200 gr. baby arugula
- 2 peaches, pitted and cut into slices
- ½ cup fresh basil leaves
- goat cheese
- salt / pepper
- ¼ LIÁ extra virgin olive oil
- Balsamic vinegar
- ¼ cup pine nuts
In a small sauté pan, toast the peaches with a medium fire, stirring often, for 3 minutes.
Remove from the fire. Then saute the goat cheese for 3min.
In a small bowl, mix the olive oil, salt and pepper.
Place the arugula in a large salad bowl and add dressing over the fresh greens enough to get them moisten.
Place the peaches, the goat cheese over the arugula, season with basil.
Drizzle with balsamic and LIÁ extra virgin olive oil is the final touch.
