Greek cabbage with rice – Lahanorizo
Ingredients
Main Ingredients:
- 1 onion
- 200 gr extra virgin olive oil
- 1 clove(s) of garlic
- 1 Kg cabbage
- 200 gr rice
- 1-1 1/2 liter vegetable stock
- salt
- pepper
- lemon zest, of 2 lemons
- lemon juice, of 1 lemon
- 2 spring onions
- 1/4 bunch dill
To serve:
- lemon zest, of 1 lemon
- dill
- fresh onion
- pepper
- Extra virgin olive oil
- feta cheese
Directions
Place a pot on heat and add 100 gr of extra virgin olive oil.
Cut the onions into large pieces, the garlic into slices, add them to the pot, and sauté.
Cut the cabbage into thick strips or into large pieces, add them to the pot and sauté them for 8-10 minutes until they are tender.
Add the rice and mix. Add the stock, the salt, the pepper, and simmer over low heat for 15-20 minutes. Stir occasionally.
Remove from the heat and add pepper, the rest of the extra virgin olive oil, the zest of 2 lemons, the juice of 1 lemon, the green part of the spring onions and the dill finely chopped, and stir.
Serve with lemon zest, dill, finely chopped spring onion, pepper, olive oil, and feta cheese.
