Lentil Vegetable Curry
Ingredients
Main Ingredients:
- 100 gr Extra Virgin Olive Oil
- 1 tablespoon(s) ginger, fresh, grated
- 1 onion, large
- 3 clove(s) of garlic
- 1 tablespoon(s) curry, medium, powder
- 1 tablespoon(s) tomato paste
- 4 carrots, peeled
- 2 leeks, whole
- 300 g lentils
- 1 liter water
- salt
- pepper
- 150 g spinach
- strained yogurt, to serve
- coriander, to serve ( optional )
Directions
Place a pot over medium heat and add the extra virgin olive oil.
Grate the ginger, finely chop the onion and garlic and add them to the pot.
Sauté for 5-7 minutes, until they caramelize and turn golden.
Add the curry and tomato paste. Stir with a wooden spoon.
Thinly slice the carrots, finely chop the leeks and add them to the pot.
Sauté and add the lentils, water, salt and pepper.
Lower heat and simmer for 25 minutes or until the lentils soften.
Then add the spinach and stir for 1 minute, until they wilt.
Season to taste and serve.
Top with 1 tablespoon of yogurt and some fresh coriander leaves.
