  • 1 large onion, finely chopped
  • 3 cloves of garlic, crushed
  • 1 kg tomatoes, grated
  • 1/2 bunch parsley, finely chopped
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Clean, wash, and drain the green beans thoroughly.
  2. Cut the potato into large chunks and slice the courgettes into thick rounds.
  3. Heat half of the extra virgin olive oil in a large, wide pot over medium heat.
  4. Add the chopped onion and sauté until translucent.
  5. Add the garlic, cooking briefly until fragrant, then add the green beans, courgettes, and grated tomatoes.
  6. Season with salt and pepper, sprinkle in the chopped parsley, and stir everything well.
  7. Cover the pot and let the vegetables simmer gently in their own juices. Add a little water if necessary, but traditionally, Ladera relies on EVOO and tomatoes for moisture.
  8. Cook for about 40–50 minutes, or until the vegetables are tender. Add the remaining EVOO towards the end of cooking to enrich the flavours.
